About Cheese

Cheese is made mostly from the milk of cows but also the milk of other animals, including sheep, goats, buffalo, reindeer, camels and yaks. Around 4000 years ago people started to breed animals and process their milk to make cheese. To do this, milk is usually acidified and then the enzymes of rennet or bacterial enzymes that work similarly are added to prompt the casein protein to coagulate. The solid matter (curd) is then separated from the liquid (whey) and before pressing to make the final product.  Some cheeses also have aromatic mould(s) on the rind, the outer layer, or throughout the cheese.

Cheese is produced in many countries around the world, and here’s a link to a great resource to discover more about cheese. Parent and Teacher Notes

Give each child or group of children a copy of the handout with cheese descriptions, and pin the cheese images on a wall. As an alternative to using the cheese pictures, you could also provide cheese samples, and run a cheese tasting!  You could also ask each child to bring a cheese and research a write their own cheese description and tasting notes!
